Without going into a long story, Denise has decided to go from vegetarian to complete Vegan like yours truly- ME! So we were having this discussion about the importance of protein, good fats and where to get her sources of protein from since she no longer will be having dairy, or eggs. I brought up the fact that Pistachios are a nut she should consider putting in her diet...
Nutrition Data is the Internet’s foremost authority on food ingredients and nutritional content and values. I mean where else can you obtain the amino acid profile of a Turkish date to the omega 3 value of a sardine?
Pistachios are the most nutrient dense nut. They contain 8 essential nutrients: thiamin, vitamin B6, copper, manganese, potassium, fiber, phosphorus, and magnesium. Lutein, an antioxidant needed to maintain eye health is also present in pistachios.
For someone with high cholesterol , pistachios contain phytosterols, a naturally occurring compound shown to help lower cholesterol absorption. The American Journal of Clinical Nutrition published a study in 2008 that found eating one to two handfuls of pistachios a day resulted in a 9-12% reduction in LDL “bad” cholesterol levels.
Most people don’t think of grabbing a handful of pistachio nuts for a snack. But I have found they hit the spot in satisfying the need to snack along with Goji berries and chocolate Vegan Chips. It’s a little filling but not too heavy. You only need to eat a handful to feel full.

And speaking of stumping, one of my favorite pastimes in coming up with little tid-bits of nutritional trivia that I give to my students in classes.
One of favorites, that EVERYONE has gotten wrong until recently, is my “nuts on a desert island” quiz. See if you know it cause someone (Good one Tinamarie Guaglianone!) got it so it’s being retired. Darn you Tina! LOL!

Question: You’re stranded on a desert island and a ship comes by and says “I’m gonna’ drop you off one batch of nuts each month. You need to choose one type of nut and it’s important that you remember the only water obtainable is from coconuts for which you must climb trees to obtain – so you’ll need to maintain some muscle mass so the nut’s protein profile is essential!”
Choices (raw, blanched or roasted – doesn’t matter):
1. Almonds
2. Cashews
3. Pistachios
So think fast. Don’t Google it. Do you know it? What would be your second choice?

Surprisingly enough, the answer was outlined in the choice selections – but reversed.
It’s surprising to know that almonds would not be a sufficient protein source regardless of the quantity consumed. You would eventually wilt away and have the darndest time climbing those trees to get your coconuts. And although there’s really no such thing as an essential amino acid (by which I mean the body can absolutely not synthesize it), the amino acids that the Almond’s miss (in the EAA pool) are so difficult for the body to synthesize, you’d wilt away in no time.

Another stitch!
Ok, so when you have a long run planned......DO NOT switch things up, drink something different or eat those little gooey things! BiG MISTAKE! I had a 13 mile run alllll planned out and was rocking my run for the first 3 miles, then all the sudden, I started getting a stitch in my side! This stitch was not work able or able to move around in my stomach. It was the worst I ever felt! I walked for 1 minute than started to run again. I made it to 5.31 miles, then I was done! I ate a stupid little chewy thing that is supposed to give you energy along with a sip of this electrolyte drink- DUMB ASS! I should have known better! I feel great just drinking water and not eating those stupid things! I went and did some body weight only things like push ups, pull ups and core, for about 25 minutes, and got all pissy and went home. I am on a mission though. I came home to drink a shake, and then went backto the gym with Mario. He did his weights, and I tackled the treadmill, but for a brief encounter! GRR! I did two miles and teh STICH was back! I nicely got off the treadmill without kicking it, and trhowing a fit, and did the arc trainer for 10 minutes and then the dreaded stair MONSTER which is a total GLUTE cardio machine! MAN OH MAN! 10 minutes is all ya need of this thing! ! Overall I had a great day of cardio and bodyweight exercises, and didn't set out to complete 13 miles, but not because I was tired, or lazy or because I was out of breath!
What I learned about today is that I should NEVER change what works, or as my friend Denise says, "Why fix it if it isn't broke"!
Right from the gym, Mario wanted to go get a piece of Filet Mignon from the butcher for lunch and so while he went there, I went to Andy's in Rye... OMG! I got the #5 on a whole grain wrap which is a whole grain wrap with pepper spread, sliced apples, avocado, spinach leaves and cucumbers. On the side I had sauteed eggokant with tomatoes and peppers, and sugar snap peas.....with my fabulous COCONUT WATER! You actually drink it right from the coconut! DEEELISH!
We have 2 more days till we leave for a well deserved vacation to California! Look out! SO excited as I have never been there! I will be taking pictures like crazy of the things we do, see and of course of eachother! I love being on vacation with my husband...We always have the best time, fall in love all over and really just confirm why we fell in love with eachother! I love vacations because I enjoy watching Mario relax, unwind and just get his tushy in the ocean where he is the happiest! LOVE HIM SO MUCH!
