OMG! Delish Recipes!

Ok so first, I was so amazed with the salad from Modern Barn that I went to Whole Foods and grabbed all the ingredients in the salad and brought them home to make my own version! OH YUM!


  • Baby romaine leaves
  • Pinto beans
  • Chick peas
  • raw unsalted pistachios
  • cucumbers
  • red onions
  • cherry tomatoes
  • 1/2 apple diced


Mix well and tossed with olive oil & 2 tbsp. white balsamic vinegar. It was sooo delicious tasty and I wanted to eat the whole bowl, but I saved some. Sorry I didn't take a picture, I was too busy eating it all!

SO my next recipe was from Monday as well- My post workout shake! You HAVE to try this if you are using ISAGENIX products I am OBSESSED WITH THEM!


  • 2 Scoops chocolate Isalean Protein
  • 2 oz Ionix Supreme
  • 9 oz water
  • ice
  • 5 frozen Cherries

Blend for 30 seconds and INHALE, whoops, I mean enjoy!

I have some favorites so far that I have been using with Isagenix! The Slim Cakes are the PERFECT snack for those times where you are not starving but want a sweet treat or something light to munch on! I usually have these between breakfast and my workout.

When I started the cleanse I was 114lbs. I dropped four pounds down to 110lbs. The day after I even dropped to 109, which was too too low for me, I started to look sunken in, now back up to 111, I have been able to maintain this weight because I continue to follow the outline for the day that you receive when you do a cleanse with Isagenix. I feel amazing and I am even more defined. I noticed a big difference in my shoulders and arms, as well as my glutes and quads! Little changes go a long way!

My new spot!

Sunday was just a night day overall as Mario and Heather and I went to visit some friends and then hit this new spot or dinner!  Some of our clients have been telling us to go, so we finally did, and we were so happy!

You have GOT to get in the car with the family or your honey for date night and head on over to Mondern Barne in Armonk, NY! DELICIOUS! Contemporary American Cuisine, Contemporary design, I just walked in the place and knew I would LOVE the food and the ambiance. They have everything from Mussels to Hangar Steak, mashed potatoes to these incredible salads, we loved the place. I found out that Modern Barne uses organic ingredients whenever possible! Mario started with the octopus salad, I started with Mussels! (eh-hm, I will get back to that one), and Heather my daughter waited for her entree of hangar steak witha huge plate of mashed potatoes- She is NOTHING like her mother and 90lbs with a brick in her pocket! YES, I am envious that she just breathes air and she stays so teeny tiny!

Anywho! For my main course, I asked the waiter to mix two salads together- The local Green Salad, which consisted of cuc tomatoes and red onions,  with local mixed greens,- mixed with the Barn salad which consisted of black ceci beans, chick peas, black olives, blood oranges cucumbers, pistachios. They left out the blue cheese and eggs. Mario had broccoli rabe, with rare filet mignon. We truly enjoyed the food. The servers were great, and very friendly.

Spelt apple and walnut muffins

Spelt Apple & walnut muffins

I love creating new recipes as you all know! I love to take a really bad and fattening sugary recipe and make it my own- The Fit Green Goddess way! SO I saw this muffin recipe and decided to give it a try. Boy was I happy I did! I couldn't resist sinking my teeth into one while they were pipping HOT! DELISH! The best part of me creating a certain recipe is that from there, what I add to the recipe next time is endless!

This batch made 12 muffins


SUPER nutritious and so irresistible!



Ingredients:

For the yummy topping:
  • 3 tbsp date sugar- instead of SUGAR
  • 1 teaspoon cinnamon
  • 1/8 tsp salt
  • 1/4 cup spelt flour- instead of flour





For the muffins:
  • 4 green apples peeled and shredded
  • 1/4 cup coconut oil- instead of safflower oil
  • 1/2 cup maple syrup
  • 1 cup almond milk- instead of regular milk
  • 2 tsp apple cider vinegar
  • 1 teaspoon vanilla
  • 1/2 cup walnuts chopped
  • 1/2 cup date sugar-instead of white sugar
  • 3.5 cups spelt flour-instead of white flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
How to make:
Preheat the oven to 350. Either spray your muffin tray with Pam cooking spray or use the paper muffin liners, I forgot to use mine- DUH!
In a mixing bowl, mix the ingredients for teh yummy topping and set aside.
In another mixing bowl, add the oil, syrup, almond milk, Apple CIder Vinegar, and vanilla.

In the thrid bowl, add the walnuts and the date sugar, the spelt flour, baking soda, baking powder, cinnamon and mix well.
Whisk the wet inigredients together slowly adding to the dry ingredients. If the batter is a little too stiff, you may add a little more almond milk. Fold in the apples.

Scoop out a spoonful for each muffin cup, and top with the yummy topping.
I cooked mine for 18 minutes and they were PERFECT! Each of your ovens are different, so the best way is to stick a knife in the middle of one and if it comes out dry....well then they are done!
If you are strong enough to wait about 39 minutes before eating one, then you are stronger than me! They are DELICIOUS when they are HOT!

MOVE OVER BETTY CROCKER!

There is a NEW VEGAN HEALTHY CHEF IN TOWN! That would be yours truly! ME!
Cupcakes seem to be the new craze! There are cupcake stores popping up all over. I would NEVER step into one, simply because I don't want a MUFFIN TOP or a big but! :O)

I do love to take the worst and most fattening recipe and make it GLOW with fabulous nutrients and taste for all to enjoy! My friends who compete in figure competitions, my clients who are on meal plans, my athlete friends can all enjoy ANY of my FIT GREEN GODDESS YUMMIES!

Here is what I made today!

 I found a recipe for Oatmeal Banana cupcakes... I switched up the recipe and made it my own. I am going to FINALLY share the recipe with you.
This is what the recipe called for: From vegan cupcakes!

  • 1/2 cup Margarine- softened- (I USED SMART BUTTER)
  • 1/2 cup organic unbleached sugar- (I USED COCONUT CRYSTALS)
  • 3/4 cup agave
  • 2 cups mashed ripe bananas
  • 1.5 cups all purpose flour -( I USED CHICK PEA FLOUR)
  • 1 cup quick oats- ( I USED OLD FASHIONED OATS)
  • 1 tbsp. baking powder
  • 1 tbsp. baking soda
  • 3/4 teaspoon salt




In a mixing bowl, cream margarine and organic unbleached sugar. Add bananas and agave nectar, mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Fill paper-lined muffin 2/3's full. Bake at 350 for 18-20 minutes or until cupcake test-done.



The frosting called for:
  • 3 cups unbleached organic sugar - (I USED COCONUT CRYSTALS)
  • 1/2 cup margarine softened- (I USED SMART BUTTER)
  • 1/4 cup soy milk
  • 1.5 teaspoons vanilla
  • 1/4 cup mashed raspberries- ( I USED FROZEN, then deforested and mashed them up)






 My icing was a little runny and watery, I believe it's because I used a little too much soy milk.... But actually it tasted amazing, and since I poked holes in the center of each cupcake, I was able to drip the syrup-y mixture into the center down the hole and around the cupcake. I did a taste test, and had to refrain from eating all the cupcakes! MAN O MAN! Wait till you try these bad boys! I love how they are not overly sweet and you can taste the HEALTHY ingredients that I chose.

FRIDAY IS FINALLY HERE!

Not like I can relax or anything...I mean, I have clients, conference calls, cooking, doctor's appointments, laundry and granola to get done. I sware, if I wasn't so fit, there would be no way I would have the energy to get it all done.  I give my diet all the credit- PROMISE! 


I always tell my clients to think of food as your gas tank. If you are driving a Mercedes Benz, you aren't going to put cheap oil and gas in it, are you? NO WAY! You are going to go to MERCEDES BENZ for the oil change and you are going to put PREMIUM gasoline in your tank. The same thing goes for your body! It amazes me that people treat their cars and homes better than they treat their bodies. I put ONLY the BEST foods in my body because I know they will fill up my energy tank, my thinking tank and my RUNNING TANK! :O) 













My Breakfast this morning was SO delicious and FILLED with amazing ingredients! 










  • 1/4 cup Steel Cut Oats
  • 1 scoop of Vanilla Protein Energizer
  • 1 sprinkle of cinnamon
I also had my hot and creamy Starbuck's Coffee with a splash of extra hot soy...It's so comforting on such a FRIGID morning! If you are in a rush to get out of the house early as I am, You can get quick cooking steel cut oats by MCCANN or you can make your oats the night before. I have done that and cooked them in my rice cooker, which is better than the stove top. Once you have STEEL CUT OATS, you will NEVER go back to old fashioned oats. 




If you shop at Whole Foods or Trader Joes, You will find this in the cereal section. By eating the quick oats, you will not compromise the nutrients or flavor...PROMISE!

MY LUNCH!

Caught up in life's duty calling(s)!

Laundry, doctor's appointments, dinner, Whole Foods, Furniture delivery, clients to meet with, nutrition plans to work on, Botox appointments..My day is OVER BOOKED today! I have a 9 mile run scheduled for today! HA! Yesterday while mapping out my Saturday, I figured I would rise and shine by 6:00am, to start my run by 6:30. NEVER HAPPENED! My alarm went off, and I pressed snooze, and snuggled up to my husband who was warm, in la-la land!

At 6:30, I got up and was super pissed at myself, because I really wanted to get this run out if the way. Well, I trained my fabulous client, my furniture was delivered, doctor appointment reschedule due to weather, and I squeezed my run in before my appointment with Terry Conrad for a little botox and filler.
I like running my long runs first thing in the morning, before I eat anything and before I get distracted. Most importantly, I like to do my runs when I know I am not pressed for time. I got to my run at 10:45, knowing I had 9 miles to run and had to be showered at dressed for 1:00 in Greenwich CT (18 minutes away). I didn't do enough of my corrective exercises or warm ups, but I figured having Friday completely off from the gym, my legs would be ok. Well, I got to 8 miles, looked at the clock, and had to leave enough time to starch and foam roll (MUST). I ran outta the gym, and right to Terry's office all sweaty and wet. OH WELL! So the past 3 long runs I can't seem to shake 8 miles. It's making me NUTS! Next week, I am making a conscious effort to blast out a 9 mile run, if it takes me 10 hours!

Seeing Terry always makes me feel so much better! She does my face stuff (I call it). Terry is so conservative and so natural hence the company name NATURALLY  YOU . I look at some girls my age who get BOTOX (which is the age you SHOULD be doing it) and to me they look like skeletor! Their cheeks are chiseled out, their lips look like ducks beaks, and their eyes look like cats. I asked Terry why they look like that and she said it's all in the person doing the injections and what the person sitting in the chair requests. I am so glad I found her. My skin looks incredible and I feel younger and I think my skin not only has a great glow, but NO LINES! :O)

After seeing Terry I came home and inhaled a Fit Green Goddess Shake consisting of water, Vega Protein powder in chocolate, baby spinach, Chloryphyl &  frozen cherries- DELISH!

My new breakfast!

Ahhhh! I found it! A new delish breakfast! You know I am obsessed with coconut and all of the great benefits of it..... I was getting a little sick of eating the Ezekiel and banana and almond butter every morning for the past year and 6 months! WOW so strange to say that. SO as a Vegan, I have been missing yogurt. When I stumbled upon this AMAZING product, I felt as if I hit the lotto! CHeck out the ingredients and nutritional value!

New FAVORITE LUNCH!

Wednesday 12/9/2010
I get home from training clients ususally around 11:30, when I am STARVING...I also workout around 12:30- 1:00, so I need to make sure I eat something light, and at the same time FILLING! I FOUND IT!
OMG! So yummy and full of SUPER FOODS!

Here it is:

  • 1 slice Ezekiel toast
  • 1 Dr. Preagar's Veggie Burgers
  • 1/2 avocado
  • 3 tbsp your favorite hummus, mine is artichoke and spinach
After the bread is toasted, I layer it starting with the hummus, then the veggie burger and last but NOT least, the avocado. It really hits the spot! So much fiber, Omega-3 Fats and protein from the hummus, I know I am going to have a ROCKIN workout!

....I'm back from the gym, so.....
Here is my workout!

Keeping you up to date on things with my changes...

Just got back from Starbucks. In Rye, every Sunday they have a Farmer's Market, as you know if you follow my blog. So I stumbled upon this guy and a bunch of cartons of eggs. I noticed on the cartons it read
  • no antibiotics
  • flax seed fed
  • running free
  • no hormones
  • baby chicks are hand fed
So, before I handed over $5.50 for a dozen of Jumbo eggs, I asked the guy how long they stay fresh in the fridge and he told me 6 weeks. The next question I asked was if these chickens run free on a farm or in a warehouse.... and the million dollar answer was???? NOT THE ONE I WAS LOOKING FOR! UGH! he said they run in a large warehouse, but they are not kept in cages. NOT GOOD ENOUGH FOR ME, so off I went! Did you know that chickens raised in a warehouse never see light? They don't go outside! Their beaks are cut 1/2 way off so they don't peck each other,because high stressed chickens tend to do things like that. Did you know that in the processing time, the factories inject the chickens with chicken broth so they are 15% heavier, since you know, you are paying by the pound! I can go on and on, but I won't. I just like to know what I am eating and how it got to my plate, YOU???

Here are my meals today so far:

Meal one: 7:45
2 egg whites, 1 whole egg (ETHICAL EGGS)
2 sliced Ezekiel toast
1/2 avocado
1 sliced cherry tomato
1/2 cup baby spinach

*4 oz coconut water
  • multi V
  • Omega 3 fatty's
  • vitamin D
  • COQ10
  • Vitamin C
Meal two: 11:30
grande coffee with a splash of soy
1gojiberrie granola bar from Two Moms In The Raw (pretty yummy)
***Pretty amazing story about this company. A mother who was detected with MS who set out on a journey to only eat the best foods-especially Raw, with no additives and or preservatives. Pretty cool, huh?

Meal three: 1:00
a number 1 on the sandwich & wrap menu at Andy's in Rye
* a whole grain wrap filled with mixed greens, avocado & tofu
and a whole coconut water! YUM!


Meal four: 6:30
1 Small spaghetti squash (about 2 cups)
2 Dr. preagar's veggie burgers
Lemon water


Amazing how the smallest little changes and my energy levels are better, my mood is better and my workout on Saturday was off the hook, super! I did notice one thing, as soon as I ate the tofu today, I got gassy right away, so I really feel like I have to eliminate it.

I made a giant pot of beans (about 1o different types) and we decided instead of soup I would make vegetarian chili for the week. All I did was soak the beans overnight, then I rinsed them and filled the pot with fresh water, and cooked on high heat until it was boiling. Then I lowered the heat all the way and covered it to simmer for 2 hours. In a frying an I sauteed garlic and onions and added them to the pot of beans. I also added a can of whole peeled tomatoes which I pulsed in the blender first. I added chili powder sea salt, black pepper and turmeric. Smells insane! I simmered for another hour and turned off the heat Can't wait for dinner tomorrow! For Mario, I will saute ground lean turkey breast and add it to his chili for extra protein. For me? Just a bowl of vegetarian chili, and I am good! :O)

VITAMIN B12


Ok, So, in my quest to be the PERFECT Vegan, I make sure I do everything right. I make sure I use supplements each and everyday, I eat TONS of greens, lots of fruits and great sources of fats and grains. With that being said, I still don't think I am getting ENOUGH Vitamin B12. I get VERY lethargic when I shouldn't, since I get 8 to 8.5 hours of sleep every night. I eat 4 meals a day, and my life is not THAT stressful. This happened to me about 6 months ago, and I ended up getting a Vitamin B 12 shot, that made me feel better instantly. How convenient is it to go to the doctor to get these shots everytime I get tired (which is pretty much everyday!) I needed to do some deeper research and investigating! Before I get into the DRASTIC change that just took place this morning, let me explain what Vitamin B12 is and why you NEED IT!
 
Vitamin B12 is an essential B vitamin, that is especially important for vegetarians since it is not found in any large amounts in plant foods. If you become deficient in  vitamin B12 you can experience detrimental changes in certain body functions. It is required for the normal maturation of red blood cells and also for the synthesis of the myelin sheath of nerve tissue.
Are are some signs of Vitamin B2 deficiency...
Vitamin B12 deficiency manifests itself in a number of ways. Bone marrow makes fewer red blood cells and many of the cells that form are large and immature resulting in macrocytic anemia. The blood levels of B12 may decrease below normal levels.


Other signs seen with B12 deficiency include paresthesia (numbness and tingling in the hands and legs), inability to maintain balance when walking, weakness and excessive fatigue, loss of vibration and position sense, irregular menstrual cycles, and a range of psychiatric disorders including disorientation, depression, mood disturbances, irritability, memory loss, and dementia. Vitamin B12 deficiency is fairly common in the elderly and is associated with dementia and other neurological disorders seen in the geriatric population.


My signs are, fatigue, depression, irritability, and stress levels increased.


After lots of thought and research, I decided to add one protein source from an aminal back in my diet- EGGS. But NOT just any eggs because the production of commercially-grown eggs is inhumane not only to the chickens, but also the environment. I am now eating ETHICAL eggs.


How can you be sure you're supporting humane egg laying? 

According to the World Society for the Protection of Animals (WSPA), look for these labels: 
• Certified Humane
• American Humane Certified
• Animal Welfare Approved
The fun doesn't stop there; the WSPA site is full of tools for humane food buying. For instance, to find out what are the most humane brands your local grocer carries, check out this great tool from the WSPA. You can choose your grocer (two of my closest stores were on the list), and it will give you a list of brand-names those chains carry that are humane.
I went to the site and typed in Whole foods and found my eggs!  
So Friday was my first day having an egg in OVER ONE YEAR. I had 1 whole egg & 1 egg white on 1 slice of Ezekiel toast. I can't deny- It was delicious! I discovered that 1 egg white has 4 grams of protein, 16 calories, and 0 fat & carbs. 1 whole egg has 70 calories, 6 grams of protein, 7 grams of fat, 0 carbs.  So let's compare what I normally eat:

Old breakfast:
1 slice cinnamon raisin Ezekiel toast...80 cal, 18 carbs, 3 protein, 0.5 fat
1 banana...105 cals, 27 carbs, 1 protein, 0 fat
1.5 tbsp almond butter...150 cal, 3 carbs, 2 protein, 9 fat
total calories-335
total carbs-48
total fat-9.5
total protein-6

New breakfast:
1 whole egg, 1 egg white...86 calories, 10 protein, 0 carbs, 7 fat
1 slice ezekiel toast...80 cals, 4 protein, 15 carbs, 1 fat
1 cup baby fresh spinach...7 cals, 1 protein, 1 carbs, 0 fat
Total Calories- 173
total carbs-16 carbs
total fat-8
total protein-15 grams

Wow! I didn't realize how many carbs I was ingesting every morning for the past year! I am such a routine person, so once I started to eat the Ezekiel & banana & A butter, I never looked back, besides, I liked making my Fit Green Goddess Shakes after my workouts.  
I finally have been taking a look back at my daily habits over the year, and while I started out GREAT, and balanced with my nutrients, I have been reaching for way too many carbs. WHen I say the word carbs, I mean, fruits. I believe I am eating tooo many! I am always in my kitchen grazing on dried mangos, goji berries, when I open the fridge, I eat 2-3 dates, I add 2 cups of fruit to my shakes. 
I didn't know that inflammation starts in the gut! two thirds of the body's defenses start in the GI tract, yet it is pretty much overlooked by doctors. Read more on this causes of inflammation .

SO back to my eggs & I being reunited! I am so happy, I can almost feel the vitamin b 12 getting soaked up by my body! How about the lecithin, which breaks down body fat?  Eggs curb your appetite, so you will feel fuller longer. Here is a tip: bowl a dozen eggs, peel them once cooled and store in a zip lock baggie for a quick snack!

DOes this mean I am still a Vegan? I think so! I am NOT eating any meat, chicken, turkey or fish, NO DAIRY (YUK) and I don't wish to. I am so thankful to have found a company that is ethical. 
Now I can enjoy a super big veggie omelet and get a great source of serious protein & vitamin b12!

RUSTIC PASTA Recipe...

This recipe is great, different and taste like a mouthful of super food nutrients! You have to be open to trying NEW food combinations as a Super hero. I got this recipe from the Alicia Silverstone  & her book BE Kind Diet- AMAZING!

You MUST try this!
RUSTIC PASTA


Serves 4 to 6
-1/4 pound pasta (any favorite shape, I used  brown rice fusilli)
-2 tbps olive oil
-2 large onions thinly sliced
-2 garlic cloves finely chopped
-2 celery stalks diced
-1/4 cup shoyu (type of soy sauce)
-1/2 tsp fine sea salt
-1/2 tsp garlic powder
-1 head of cabbage thinly sliced- I used the purple cabbage
-5-6 tbps marinara sauce- I make my own

Bring a large pot of water to a boil for the pasta. Salt the water and add the pasta; cook just until al dente. Drain the pasta
Meanwhile, heat the oil in a large skillet over high heat. Add the onions and cook for 7 minutes until softened, then add the garlic and saute for 3 minutes longer, until the onions are transparent and turning golden.
Add the celery to the skillet and saute for 3 to 4 minutes. Stir in the shoyu, salt, and garlic powder, then add the cabbage; saute for 4 minutes. Reduce the heat to a simmer and cook for 5 minutes longer.
Add the pasta to the skillet with the marinara sauce and toss together. Cook over medium-high heat for a minute or two and serve.

What a busy Sunday!

What a busy Sunday I had today! Sheesh! I woke up at 6:30 and flew out of my house to train my girl Robin at 7:30. You could tell we were both sluggin' it for the first 30 minutes. Then my Starbuck's kicked in and I amped up her work out! Once I saw little beads of sweat coming down her head, I knew she was getting her butt whooped! MAKES MY DAY!

After Robin left, I ran 5.33 miles in 56 minutes, which isn't bad. I was happy! 56 minutes and 564 calories burned before 10am! NICE! Then my next VICTIM came in- Terry. Terry hates to workout. and thinks it's torture every minute, but Terry also LOVEs how she feels during the week. She feels more energetic, stronger and more happy throughout her day! What a great feeling!

I rushed home to make a FABULOUS new recipe I found, and as you know me, I alter everything! SO here is my Recipe!


Mushroom Buckwheat Soup w/ Cannellini Beans & Cabbage






 Mushroom Buckwheat Soup with Cannellini Beans and Cabbage

1/2 cup Buckwheat
4 cups veggie broth- I used Mushroom broth
2 medium onions diced- Iused 1.5 onions
6 oz portobello mushrooms halved- I used shiratake mushrooms
3 cloves garlic- minced
fresh black pepper to taste
salt to taste
2 teaspoons minced fresh thyme
2 tbsp dry sherry
1/2 teaspoon paprike- I used a little more!
4 cups water
16 oz cannellini beans Drained
1 tbsp lime juice

Place buckwheat in a large soup pot, add the broth of your choice and bring to a boil. Should cook with the cover on for 18 minutes. I used my rice cooker which cooked it in no time!
While the buckwheat is cooking, cook the onion in a non-stick skillet over medium heat until it softens and begins to brown. Once it's beginning to brown, add the garlic and mushrooms & a little S&P, reduce heat and cover. Cook, stirring regularly, until mushrooms soften, about 3-4 minutes. Add thyme & Sherry and cook until the alcohol cooks off.

Once the buckwheat is cooked, add the mushrooms to the pot along with sliced cabbage and paprika. Add Add the cannellini beans  and cover for about 30 minutesm until cabbage is tender. If it gets too thick for your liking, add water. Stir in the lemon juice just before serving.
